ARRÒS DE RENDA [STEWED RICE WITH SNAILS] (4 persons)
- 400 gr of rice.
- 2 dozen live land snails.
- 250 gr of lima beans called "garrofón" or "fesols de la peladilla".
- 25 gr of red pepper.
- 1/2 tablespoon of oil.
In the morning, clean the snails with a lot of water and salt then place in the sun to make them exit their shells.
Pour a dash of oil in a cauldron and sauté the red pepper, previously cut into strips. Remove a portion and then add the beans called "fesols de la peladilla" and sauté. When they are done, add approx. 1.5 litres of water. Allow it to boil a little then add the snails. When it is cooked, add the rice, salt, saffron and pepper, then allow it to cook for approx. 20 minutes.
