ARRÒS A BANDA [SEAFOOD PAELLA] (6 persons)
- 2 kilos of assorted fish (grouper, sea-bream, hake, shellfish, etc.).
- 1 kilo of assorted small fish.
- 750 gr of rice.
- saffron strands.
- 1 small onion.
- black peppercorn.
- "Frígola" (herb liqueur).
- 1 laurel leaf.
- 1 garlic bulb.
Boil the assorted small fish with abundant water and separate the broth.
Heat a dash of oil in a saucepan and then sauté the fish with onion, black peppercorn, salt, "frígola" and laurel leaf. Add the broth and then cook for 15 to 20 minutes.
In another saucepan, heat two decilitres of oil and sauté a garlic bulb, a grated ripe tomato, salt, saffron and a dash of pepper.
Remove the garlic and grind in a mortar, then add the broth until the mortar is full
Sauté the rice then add the broth from the mortar and a little more broth (approximately double the amount of rice). When it is almost done (approximately 15 minutes) then place in the pre-heated oven for approx. 5 minutes.
The fish is served separately.
