RICE WITH LEAN PORK AND VEGETABLES (4 persons)
INGREDIENTS
- 400 gr of rice.
- 1/4 kg of lean pork.
- 1 artichoke.
- 200 gr of cauliflower.
- 250 gr of broad beans.
- 200 gr of peas.
- 3 "ñoras" (dried red peppers).
- 1 garlic bulb.
- 1 bundle of garlic shoots.
- saffron.
- 1 litre of water.
- 1 kilo of assorted small fish.
- 1 small tomato.
- salt.
- oil.
PREPARATION
Place the small assorted fish and water into a cauldron in order to make a good broth. Bring broth to boil then add the saffron and salt to taste.
Fry the garlic separately, then add the chopped tomato. When it is sautéed, then add it into the cauldron.
Fry the dried red peppers (ñora) and then chop and add them to the cauldron as well.
Allow everything to cook together for approx. 15 minutes, then remove the broth separately.
Clean and chop the remaining vegetables and then sauté in a paella pan with the rice, lean pork and oil.
Mix everything with the broth and then allow it to boil for 10 minutes with an intense flame. Stir it a few times and subsequently place it in the oven for approx. 5 minutes. Serve while hot.
